Japanese Green Teas

Can largely be divided into two broad categories:

Shade-grown teas

Tend towards more “soft” or subtle aromas, as well as sweet or umami flavours.

  • Matcha: powdered green tea, rich in sweetness or umami
  • Gyokuro: deep marine aromas

Open-sky teas

Refreshingly aromatic and sharp, tends towards more vegetal or herbacious notes.

  • Sencha: are often described as “sharp” or “astringent”
    • Guricha: also known as “curly tea”
  • Bancha
  • Yanagi
  • Hojicha
  • Genmaicha

(There are a lot of teas that can fall outside these categories.)
